Bidrage med feedbackI’m giving them my personal 3 Michelin Stars. Omg this is the best meal I’ve had in Singapore for real. Every single course was amazing! Fantastic service from Kat as well and Chef Kim was simply amazing!
I love coming to a restaurant without much prior knowledge other than the current Michelin guide rating and being completely blown away! Such was the case with dinner at Meta. A quite distinct cuisine, I would say turbo charged Korean French, with some Japanese influences. The level here is at times staggering, many dishes being clearly in world class territory. A dish of quail stuffed with foie gras, served with morel and truffle sauce could easily pass as a creation of Cesar Ramirez at CTBF, without losing any individuality. The Korean BBQ, last savory dish of the evening was another highlight. A dish of almost emotional quality. All other dishes were top notch as well, including the two supplements options of Korean oyster and stuffed chicken wing. The wine list is quite short, but that made it easier to spot some nice white Burgundy to pair with the meal. Staff was a pleasure to interact with, they clearly love what they are doing. Overall, an amazing dinner experience and on my want to come again list.
The last time i dined in Meta, was before they got their Michelin star. At that time their restaurant was much smaller and they were known for their korean fusion dishes and dragon’s breath ice cream that looked like a pebble. Now with their Michelin star, they are more focused on their main dishes and no more dragon’s breath. There is no fancy plating like other fine dining, just elegant white round plates that focuses on the food, which i much prefer it. Just look at the pictures! The food is very Korean based following the Chef’s heritage, with hints of Japanese and other countries thrown in. The first starter came, we were like, “not bad, quite good!” Then with every course that came, it just got better and better. We were so full at the last main, which was the rice, white kimchi and beef galbi, so simple, but it was so good that we still finished it. Then came the desserts. Even though we were already bursting at the seams, somehow the desserts just brought us down gently and satisfyingly. It was truly a gastronomic journey. No fancy shenanigans, like its plating, just good food that eases you in slowly and gradually until you reach the peak of the journey, then brings you down slowly again from the high. The service was wonderful, and much more friendlier than other fine dining we have been to. The sommelier and staff was very enthusiastic and smile alot. It seems they enjoy and are proud of their work. Only the chefs seems very serious, or maybe just stress from kitchen work. In the last main introduction, the sous chef came out with the service to introduce the dish that was created by him. But just the service staff spoke enthusiastically about the dish while the chef, looking very stoic, just set up the dish and walked away. I thought he would be very proud of the fantastic dish he created, but maybe not now. I will be back again next season!
Went back for the new season's menu. Some of the items were the same however the level of cooking felt like it had improved from what was already a very impressive standard. Definitely looking forward to see this restaurant develop and evolve in what should be a 2 star in the next few years. Service was professional and I enjoyed the pairings done by the Somm, Nicholas.
“This is really a very good meal ” can’t find a better description. It was really nice returning to Meta after two years and pleasantly surprised by a distinctive level up dining experience. I wondered throughout my dinner, how did the chef/ entire team manage to do every dish so well. Actual rating
