As an authentic Sichuan native I am glad to say that Truly Sichuan is actually authentic. So far I have dimmed twice there and ordered the exit three times. The food was consistently excellent. Here are food we have tried and loved most: To share: Dan Dan Noodles Chongqing Hot Pepper Noodles Entries: Braised Beef or Fish Fillets in Chili Sauce Chongqing Spicy Diced Chicken Vegetables: Sautéed Snow Pea Shoots with Fresh Garlic Renee, the owner, is a beautiful lady: warm, incere, and with a high standard. Truly Sichuan is a great addition to our community.
Short of staff warning!!!! But they serve truly Sichuan food!!! Finally got a chance to try Truly Sichuan after eyeing it for months. We went for Saturday night dinner, the place was pretty busy. As soon as we entered, we felt the staff are overwhelmed, everyone’s running around crazy. But we decided to give it a try anyway. The menu is decently concise, with plenty of good options. We ordered the pancake, braised fish, eggplant with garlic sauce and the seafood noodles. I was surprised the pancake didn’t come with any side of sauce. But the braised fish and eggplant was aaahhhmmaazing!!!! Almost exactly as I had anticipated. The eggplant was juicy, full of tasty sauce. The seafood noodles tasted great too, when I mixed it with the chili sauce from braised fish. Throughout the dinner, we experienced several issues. Our eggplant order was missed initially. No one really came to attend our table, unless we called them. Took us almost 15 minutes to pay our bill. We saw several other diners also waiting empty handed at their table. They also cutdown their hours to only evening time, which I believe due to staff shortage. I was really glad to see, despite staffing issues, they were able to maintain the great quality of food. Genuinely had one of the best meals I’ve ever eaten here last night. Not only were the waitstaff and owner so kind and so quick to help/make recommendations, but the food was really out of this world. For appetizers we specifically enjoyed the soup dumplings and the scallion pancakes. The cucumber salad was also unexpectedly delicious. We ordered a couple entrees and split them family style, and my personal favorites ended up being the twice-cooked pork belly and the shredded pork with garlic sauce. The crispy tofu was a spur-of-the-moment order, but it ended up being one of our favorite things on the table. For dessert we split the mango cake and the chocolate lava cake. Both were absolutely delicious. Could not recommend this place highly enough. Ridgewood is a tough environment for new restaurants but this place really deserves to thrive.
