Katrina was really patient with me and helped me pair a wine with my meal and made the whole experience a party. If you're in pueblo and you are looking for a warm, romantic, fun place to dine... start at Bistoro then maybe stay there ??
The Summer 2022 menu at Bistoro is incredible! The Steak is so good with the red pepper sauce and the new Basque cheesecake with that glassy caramelized top that cracks is so delicious. I love a Gimlet and this one is all the flavors of summer with rosemary, lime, cucumber!
The food was good. My party felt like there were many similar flavors, still delicious but repeated. They were also out of all sweet wines which is not bad but did not have many sweet cocktails either. If you are a light drinker looking for something sweet you may want to check they are stocked up before going. The staff was polite but kind of all over the place. We were told one person would be our server, then someone else got our drinks, we never saw the initially mentioned server but the group that did help us was effective. All in all it was a good experience.
We've been waiting to come here for a while and we were not disappointed. When I initially called they said, there is no need for a reservation because it's a weekday but I'm glad I made one because it got busy fast a few minutes after we were sat down! The menu is not extensive by any standards. There isn't anything super spicy either. But they have a fair bit of choices. We started with the house tray for the tapas and the crostinis with a garlic bisque entree to share among the 3 of us. Our main entrees included the Bisteak, the Lobero and the Fieri with a side of Al Eti fries to share and the Caesar salad. On the house tray, we loved the tomatoes and the peppers stuff with cream cheese. That was super delicious! The crostinis were of 4 different varieties hummus with olive, bruschetta, Pueblo chilli's with cheese and a cherry compote with cheese. Our favorite was the bruschetta followed by the hummus and olive. We were told that the Pueblo chili one would have a kick, but it did not. The sweet cherry compote one was interesting esp with the feta, but it felt too sweet, so won't order that next time. The garlic bisque is delicious, esp with the bread. If having for one person, go with the side of you want any space for more food. The entree is good to share among 2 3 people. For the entrees, the portion size is HUGE! I loved my Lobero which had mushrooms, chillis, caramelized onion and aioli. It was very tasty. The Bisteak was similar to a Philly cheese steak but without the cheese. It was also very good. The Fieri was a little disappointing as the pork was quite chewy and it was bland. The fries were delicious but I do wish the oil had been all over the fries and not just in the bottom. The salad was tasty. We didn't have desert but we did have a glass of Albarino white wine from a Spanish winery. Close to a chardonnay and didn't really have much of a buzz which I appreciated. All in all, cute, oldish place. Their servers are nice but may need to work on their ability to identify dishes correctly. Price is decent but not cheap for sure. Will be back to try more of the entrees and tapas!
We just had a girls night out here and it was wonderful! They spoiled us with a family style meal of tapas, salads, steak, chicken seasoned fries with aioli, steamed veggies and Tullumba for dessert. The food was amazing, the service was wonderful and the atmosphere was perfect for a fun and relaxing night out.
