From the duke of orvieto I had the pleasure of experimenting traditional dishes of the orvietan cuisine, also being able to appreciate unusual flavors now belonging to a distant historical era. the menu is based on courses dating back to the early 500 years, when, given the recent discovery of the Americas, there are neither potatoes nor tomatoes. particularly recommended carbonara with truffle and umbrichelli to the red wine. This last dish in particular is on the palate with a decided and unique goto. I hope to find myself soon in the vicinity of orviet so that I can make another visit to the duke soon.
