Authentic Korean hand made Kalguksu. The main store in Korea has been since 1968 family owned business in the US as well. Original menu has only two noodles which are original anchovy and chicken. LA branch has more options and menu. You can take out soup and fresh noodle separately and cook at home.
Hyesung Noodle House, in my opinion, is a lot better than other noodle places around ktown. I believe its better than hangari. Im not a huge fan of these korean noodles, but something about this particular place serves this chicken noodle dish really well. The side dishes consisting of Kimchi was so delicious! Wish I can take them to all the korean restaurants in ktown. They offered me a free refill of the noodles after I was done, but they just gave me a new fresh bowl of the knife chicken noodles, very generous of the staff! I definitely will be back during those cold days and craving these noodles! Parking is not free and costs around $3, so keep that in mind!
Ambiance: 4/5 Food: 5/5 Service: 5/5 Hungover? Yeah this is the spot. It's going to cure you. I've never had Kalguksu before so I didn't know what to expect but this was a soul enriching experience. Ambiance: just a small mom and pop shop that is nice and cozy, not very spacious but you don't want a massive room for a nice warm meal. Food: Chicken Noodle: 5/5, the knife cut noodles were perfectly chewy and the broth tasted like happiness. The broth was light yet flavorful, making it seem like you wouldn't be able to get enough of it. The chicken pieces were shredded and soft to eat, I didn't feel like I was skimped out in any way either. Service: Granted we were the only ones there at first, we received quick and attentive service with our kimchi constantly being refilled (which was also delicious) along with the water. I'd definitely like to come back here not hungover but seeing as I'm not in SoCal enough, this will still be my recommendation for any friends in pain (or not).
The kimchi is excellent here. It's hard to find pre made kimchi that I like, but I got the 1/2 gallon house kimchi and fell in love. It strikes the sweet spot between fresh/spicy/firm and sour. Had a few of the soups and they were amazing as well. The chicken soups have helped me get over feeling sick a few times. Tastes like it's made with care and like it's from an ahjumma's kitchen.
