Bidrage med feedbackAfter a week in dillon and try any possibility, cafe profusion is hands down the best place for vegans. her Garbanzo-Bohnen-Curry-Eintopf and her gingered-lentils-dal are a joy at the palate with creative aromen and whole fresh vegetables. I will go back to taste her roasted carrot and the red quinoa salat and her carrot ginger soup. met many natives at the outdoor training window singing the lobe of this little mother and pop shop. they will eat outside in the shade, but hey, it's perfect rocky mountain weather. if you want creative, delicious, healthy, satisfying vegan cuisine, cafe profusion is the place.
After experiencing many great vegan food in Austin, I am sometimes disappointed when I travel. especially when the fusion describes the taste. I will eat here every time I visit dillon because I really like the vegan options here. if the understandable policy allowed it, I would rate five stars because it is better than the top restaurants I have experienced. that is not a chic restaurant. it's tiny. the tastes are demanding.

We ordered the Gingered lentils, carrot ginger soup, garbanzo stew and hummus and they were all great. I LOVED the lentils, seriously such incredible flavor. The ginger soup was good, but a little too much kick for me. Would definitely return next time we are in town.
Driving through CO, I came across this place at the perfect moment. My boyfriend and I were starved and stumbled in, shocked at how tiny it was. I love little intimate cafes, so we were happy. The entire menu is gluten free, which is exactly what I needed. There were four or five vegan soups and such on the menu as well as a vegan special of the day. I tried a butternut squash soup and curried lentils. Everything was amazing!
