The Bariloche area in general lacks vegan options, so it was quite a surprise to find this vegetarian eatery in the rustic and secluded hamlet of Colonia Suiza. Silvestre is hidden towards the far back of the main plaza or shopping area of Colonia Suiza by a playground type area with a rock climbing wall. It's a small teal-roofed sheet metal house--can't miss it. The menu is vegetarian, but every dish is made vegan if you remove the cheese, and since the food is all made fresh to order, this won't be an issue. I was quite hungry when I stopped by, so I ordered their veggie burger and the silvestre salad. The burger was made mostly of yamaní rice and served on some sort of whole wheat bread that was actually quite nice. It was generously sized and aside from the patty featured grilled eggplant, zucchini, and onions, fresh tomato, and an absolutely delicious carrot spread. The patty itself was not super flavorful--I wish it had been lentil based or something like that instead, but the combination of flavors with the veggies and carrot spread nonetheless made the burger very tasty and filling. The silvestre salad has no description--quite literally as it is made from whatever is freshest that day. Mine featured cabbage, lentils, carrot, spinach, lettuce, tomato, and sprouts, and some more of that delightful carrot spread. I have to say those were some of the freshest veggies I have ever eaten--very true to its menu description. After that much food I did not really have room for dessert, but Silvestre did have vegan muffins and brownies that day as well as energy bars that were almost vegan (they had honey). This was by far the best place I ate at during my trip to Barloche. The owners are the ones serving you and they are absolutely delightful. The woman making the food was super friendly and patiently explained every dish and what it contained. If you're in the area, this is a great place to stop by for a fresh and filling meal. The food is homey, healthy, and delicious. They offer salads, sandwiches, fresh smoothies, tarts, chickpea pizzas, and baked goods. However, remember it's cash only!
