Manchester Diner - Coffee County

A popular item on the menu appears to be the Baked French Toast, which I haven't tried yet but looks enticing. Next to me, a postman was enjoying the Red Flannel Hash, topped with over-easy eggs and a generous serving of hash that seemed to contain about 25% beets. While I'm not a fan of beets, it certainly looked appealing. One thing that struck me is that the diner operates as a one-woman show. Virginia takes your order and does all the cooking herself, seven days a week, including weekend nights. I've heard she gets some help on Fridays and Saturdays since it attracts a bit of a nightlife crowd.
