Guadalajara - Castle Rock

I had a wonderful experience at Guadalajara with some authentic Mexican cuisine! The portions were generous, the chips were great, and the fresh salsa was a nice touch. Plus, the food was served piping hot, which is often lacking in other places. I will definitely return!

Guadalajara Family Mexican is undoubtedly the best Mexican restaurant in Castle Rock! Every time I visit, it reminds me of the true essence of quality cuisine. Everyone has their own opinions on what makes great food, but for my family, this is our top choice. If you're in search of trendy, overhyped spots or a place run by newcomers to the food scene, look elsewhere. However, if you're after authentic Mexican flavors at reasonable prices, along with excellent service, you won’t be let down. It can get very busy in the evenings, so be prepared for a wait and plan accordingly. Overall, this place offers delicious food and a lively atmosphere.

This is our favorite spot in Castle Rock for good to great Mexican food. The portion sizes have stayed generous even during the pandemic. However, we’ve noticed that the overall quality of the food seems to be declining a bit. It feels like there’s less care going into the dishes.

I ordered the large combination deluxe burrito, the small combination enchiladas suiza, flan, and fried ice cream. The manager was amazing! I rate it a perfect 5 out of 5.

This restaurant brings back fond memories of my roots, particularly the food! The service is excellent, and the drinks pair perfectly with the Tex-Mex cuisine. Be sure to try the Ultimate Margarita. I’ve visited twice now—once with a friend and once on my own. When dining solo, I often find that the service can be lacking, but that was definitely not the case here! I was seated promptly, and despite the restaurant being busy, my order was taken efficiently. Truly exemplary service!
