Most impactful dining experience of the year. Experimental but not bizarre. 12 diners focused on the chefs and their creations. Incredible overall but can’t stop thinking about that bread and butter course.
The chefs working here are really top notch. Very innovative food served in a chill atmosphere. Everyone sits at the counter facing the kitchen; so all seating is equal. Each course was unique and, most importantly, very yummy. Other reviewers have compared it to French Laundry (FL). Not really comparable as these are two completely different dining experiences. That said, the food is just as innovative as FL, but with more appropriate portion sizes for this many courses. The offered wine pairing wasn't great. The wines were very nice on their own, but we struggled to understand the tie between most wines to the dishes. The only other negative of the night was the final course: a dessert with celery. Horrible! I've had this at another restaurant and it didn't work there either. I appreciate stretching the boundaries, but this was a complete flop. Perhaps it would work as a sorbet between vegetable and meat course, but not as a dessert. Finally, the service was very well executed, polite, and fun; they function like a 5 star restaurant, but in a very relaxed environment. If you're looking for a very unique culinary experience and can afford it, I definitely recommend Blanca.
We traveled from D.C just for this experience. It was well worth the time. Every course was exceptional and very well executed. The pairings were also lovely. I look forward to my next visit shortly.
