Well, this bet that we played and fascinated that day is today a materialized reality in the form of a gastronomic corner in the full market of the Boqueria. and it is that this same Tuesday we attended the inauguration of the yango, the new gastronomic concept of the Abellán carles. an enclave that merges tradition and innovation and that allows the Catalan longaniza of all life to travel around the world and experience with dozens of flavors. It owes its name to the abbreviation of the urban pronunciation and the canal of llangonissa yangonissa". As noted, his idea has been encouraged by the will to create a hot dog made in catalunya, thought as an appetizer to eat on the street and quickly but without giving up quality and drip. and as the mixture enriches, the chef has not wanted to leave the longaniza with the bread only as it is tradition, but has wanted to condiment it with other toppings and colors, soaking it from different cultures. from here, from there, from tradition to universality. In this way, in yango we find up to seven different snacks of longaniza, for all drops, along with varied salads, suitable for celiacs. By the way, with respect to longant, it can be from bacon (traditional,) of turkey or vegetarian. What is yango? the word yango comes from a very urban interpretation and phonetic canall, according to the creators, of the Catalan word “Yangonissa”, word to refer to the butifarras in Cataluña. abellán carles, creator of this project, explains that he often remembered the appetizers he ate from small, butifarra sandwiches and that he imagined them going around the world. so he created them, mixing the most Catalan essence of llonganissa with other ingredients
