Ray sat with me in his little restaurant on the service street. “The meat drips down, the taste goes up!” he said. And about offset smoking (indirect method), “This is like the man in one room and woman in another.” In other words, bringing the meat and the coals together, reconciles the grill! Indirect has its place, but also coal smokers, provided that a quality, natural and chemical free briquette is used. When meat is positioned high above a thin layer of coal, ribs can still be smoked low and slowly without drying out. Admittedly, it is a technique box masters shy away
About 1.2 miles from the truck stop, I would say it was worth the walk. It's not much to see, but don't let yourself be deterred. Customer service was great, very nice restaurant of the southern family. One of the employees even gave me a ride back. I had the truck special,Chopped pork was a little dry for my taste, but it was amazing once lubricated in her house bbq sauce. Ribs have a good taste of smoke with beautiful smoke rings on the meat. Came with 4 pages Cole Slav (baked thick), baked beans that were good, bbq spaghetti that I could have done without, and house made potato salad. Plus 2 slices of bread. I had no desert, but they had about 8 different cakes that the girl at the counter claimed were made at home by her mother lol. They are on channel 16 for truck drivers who want to deliver it for 2$. All good experiences, would definitely come back.
My new one cannot miss Spot .. We travel 14 hours to get to MS and always pass through Rays on the way there. This time we stopped on the way home and were greeted by Ray's wife and son, whom I think they were as hospitable and friendly as they could release without food. I'm a top man and I like my sauce extra sharp, so they gave me a sauce called Killa, Rays tips are some of the best I've ever had and this caramel cake is fucking safe walking.
In the Restraunt. Yeah, Ray 's is a hole in the wall Restraunt, but the food is wonderful! Ray himself is a good Christain man and when my family and I went through St. Louis, we stopped and enjoyed the food and scholarship. If you expect waiters to come with tuxedo, stay at home, but if you want good BBQ, this is the place.
Good BBQ joint just off of I-40. My only real complaint would be was it had a bit more fat in the pulled pork than I would PREFER, but not all that much overall. Coleslaw and beans are on point as well!
