Santo - Boulder

Very tasteful. quiet atmosphere with a very causal staff. that was great. I had the sweet potato enchiladas because I know they have a lot to do to get sweet potato to taste them good. I wasn't disappointed by my choice. I had a mix of green and red chili christmas, what it means. I like the saltiness of the red sauce more. we started with queso, it was phenomenal, how much thought placed in the taste. salsas were also a beautiful tasting. the margaritas were fresh. had the luke chili and loved it. if they love taste, santo will make them right.

We dropped here last night. I was in santa fe. the guacamole was excellent as the fresh limonade. our server was not attentive and the food was offered in odd intervals lacking courses. the elote was good and sharp. the enchiladas were not too good. it was hard to get the leak and the 20% culinary tip was not too clear or well explained by the server. I was really disappointed with my visit.

We went there tonight with a reservation for ten, but a group of only nine--and unbeknownst to me, one of our group had an allergy that precluded him sitting inside. So, the host graciously sat him and another from our party outside, while the rest of us were indoors at our pre-ordained table. They even provided us an electrical outlet to charge some OneWheels while we ate. I had called ahead earlier in the day to make sure that they would be able to accommodate us and they definitely went above and beyond to do so. Food and service was great. Traditional New Mexican fare, with a gourmet twist. I had the carne adovada tacos, and sampled my friend's chicken enchiladas. Both were very enjoyable--flavorful and not the mouth full of fire I was expecting/dreading. Katy, our server, was attentive and offered to split our check nine ways. Wow. I'll definitely go back.

The best part of Santo was our server. He was an absolute gem, so thoughtful and attentive. I had sweet potato enchiladas. Glad I ordered chili on the side, because it was spicy! The portion was on the smaller side, but it was hearty enough with the added beans and rice. We also got a carrot cake and WOW it was good. Great atmosphere for a group or date night.

This was amazing!! My family and I went to New Mexico earlier this year and ate our hearts out and the food here brought us back. The vibe, the food and the huge selection of mezcal was perfect. Our server was also wonderful and had a great attitude and knowledge of the food and drink. I would definitely go back as there was much I'd like to try. Highly recommend!
