I decided to visit this place because previously it was an eclair shop. It has now been renovated and reopened as a new business called Francois. The owner used to have a pie shop in Rose Bay and has transformed it into a French cafe Patissiere. They offer a wide variety of breads, including delicious brioche baked in-store. Additionally, they have sweet treats like cakes, eclairs, and slices. I tried the apricot slice, which had a nice crispy pastry, fresh glazed apricots, and was a perfect snack.
Bondi has a new French bakery that has taken the place of La Maison de L'éclair. This new spot offers a variety of delicious pastries, cakes, breads, croissants, and coffee using Mutch Moore, which I had never heard of before. The bakery has limited seating inside and out, and the staff is friendly and eager to please. I tried the Cherry Danish, Paris Brest, Tarte au Citron, and Strawberry Tarte, all of which were delicious and well-prepared. While there was a bit of a wait for my take away Cappuccino due to a busy barista, the flavor and smoothness of the coffee made it worth it. I look forward to returning in the future.
