This restaurant review might be best understood by those who are middle-aged or older. It truly captures the original firmness of Sanuki udon. The chewy and elastic texture brings back nostalgic flavors. It was a very satisfying udon with great firmness. For those who mistakenly think that hardness equals firmness, this may not resonate with them. Hard udon actually originated from the now-defunct Kinsei frozen udon, and is not the true essence of Sanuki udon. Kame Seimen also perpetuated this misconception. Therefore, it's best not to confuse hardness with firmness.
